Khoya matar

This delecious Banarasi curry is easy peasy one.  Unlike other curries, this is soo creamy with a mighty addition of khoya and has an awesome combo with paratha/roti




Ingredients required

  • 1/4 kg Tomatos  (blanched in hot water, deskinned, deseeded and is quartered)
  • 1-inch piece of Ginger 
  • 2 Green chillies 
  • 1/2 tsp of whole cumin seeds/Jeera 
  • 3 tsp oil
  • 1 cup fresh green peas
  • 1/2 cup khoya
  • 1/2 tsp garam masala
  • 1 tsp jeera powder
  • Salt, to taste

Lasagna

      Lasagna is an baked Italian dish layering  ribbon-shaped pasta sheets  with white sauce, meat/vegetable mince with tomato sauce and cheese.  I had eyed this dish  nearly a month ago.. After extensive study, research and videos, (for two weeks)  I, finally am coming up with this recipe... Here I will be discussing how to prepare  & cook Lasagna sheets, preparation of two sauces (Bechamel sauce, Bolognese sauce) , Assembly, Baking and lastly how to store & reuse.  I am also presenting Lasagna cups, a new variant of   quick lasagna...

Thai green curry

   This is my second post to Thai curry (apart from thai red curry posted before)




Ingredients required

To make thai green paste

  • 3-4 thai chilly/green chillies
  • 4-5 Kaffir lime leaves
  • 1 tsp grated lemon zest (yellow part forming lemon's skin)
  • 1/2 cup of chopped coriander leaves
  • 2-inch piece of galangal/ginger
  • 4-5 garlic cloves
  • 1/2 tsp white pepper powder
  • 1/2 cup finely sliced shallots
  • 1/4 cup soy sauce

other

  • 1 cup of mixed chopped vegetables like broccoli, brinjal, cabbage, carrot
  • 1/2 cup of partially cooked baby potatos (pressure cooked for one whistle, deskinned)
  • 4 tsp of oil
  • 1 cup of coconut milk
  • Salt, to taste

Mushroom ki Rogan josh

     CupoNation is an renowned website that offers wide range of discount coupons for leading online retailers in India like Flipkart, Snapdeal etc.  And yes, Snapdeal is one of my favourite website, back at home, we often visit them for discounted buffets ranging at Hyderabad, isn't it great?  :)  Coming back to our post,  Rogan josh (rogan meaning red/oil and josh meaning heat) is an aromatic lamb dish of Persian origin.  Slowly, they prevailed to Kashmir by Mughals.  This dish has  lamb chunks cooked on high heat with excess of oil.  The characteristic red colour of this dish comes from adding degi mirch powder or kashmiri chilly powder.  This powder added, gives the immense heat to dish, and hence the name


My all-time-twist was to add mushrooms here, and yes, they tasted very great with rogan josh spices.  The entire building (with almost six individual flat) was filled by this aromatic spice and overall it was an divine combination.  Apart from the heat driven by degi mirch here, I am also adding saffron threads to bring out the richness of this rogan josh...  You can also try  other mushroom recipes here like Mushroom stir-fryMushroom theeyalMalvani khumb curryKhuskhuswali khumbLaal khumbMushroom dopyazaMushroom jalfrezi.

Mini garlic pizza


Garlic is my all-time-favourite.  So, I just tried out the same with pizza and I luved it!!  The combo with pizza, cheese worked out quite well!!!





Ingredients required


  • Readymade pizza base-1
  • Cubed paneer and capsicum - 1 cup
  • Amul cheese slice - 2 (or as required)
  • Garlic finely sliced - 25 pods
  • Soy sauce - 1/4 tsp
  • Chilly sauce - 1 tsp
  • Tomato sauce - 2 tsp
  • Pinch of salt
  • Sugar - 1/2 tsp
  • Oil, as required

Baby corn tikka -Quick bytes

   This quick starter can be prepared in a jiffy, a surprising treat indeed ;)

So, as anybody could have guessed the basic ingredients are One cup baby corns, 2 tsp finely chopped spring onions (for enhanced flavour), 2 tsp hung curd, 1 tsp chicken tikka masala, 1/2 tsp ginger-garlic paste and salt to taste.

Just marinate baby corn with curd, ginger-garlic paste, spring onions.  Adjust salt, refrigerate for four to five hours


Bake them in pre-heated oven till they are golden brown, crispy and done... Enjoy ;)
