Suji ki cookies

As adapted from Nita Mehta cookbook.  Tastes heavenly with tea, coffee etc

Ingredients required

  • 2 cups wheat flour
  • 3/4 cup sooji/ bombay rava
  • 3/4 cup icing sugar
  • Pinch of  salt
  • 1 cup of ghee/unsalted butter
  • 4 tsp of almond flour (optional)


Add in dry ingredients together, rub through ghee and knead them into a fine dough

Divide into small balls, make these balls some extent flat.  If you want you can also top with cashew powder and elaichi powder

Grill these 165 degree celsius for 25 minutes or till edges turn brown

Leave them in wire rack to cool.  After sometime, keep them stored in air-tight container.
