Carrot is one of the most nutritious root vegetables and is commonly used in simple home-style carrot poriyal. But beyond its delicious taste, carrots are loaded with health benefits. Their bright orange colour comes from β-carotene, which the body converts into Vitamin A. Carrots are also rich in dietary fibre, antioxidants, and essential minerals that support overall health.
Today, let us turn this humble vegetable into a delicious and healthy stuffed paratha packed with flavours and nutrition.
Ingredients Required
For the stuffing:
- 2 cups grated carrot
- 2 tsp crumbled onions
- 1 tsp grated amla
- 2 tsp ginger-garlic paste
- 3 tsp finely chopped mint leaves
- 3 tsp finely chopped methi leaves
- Salt to taste
- Amchoor powder to taste
- White pepper to taste
- Maggi Magic Masala or any masala of your choice
For the dough:
- 2 cups wheat flour
- Water as required
- Salt to taste
Method
- In a mixing bowl, combine grated carrot, onions, amla, ginger-garlic paste, mint leaves, methi leaves, salt, amchoor, white pepper, and masala. Mix everything well to prepare the stuffing.
- Prepare a soft dough using wheat flour, salt, and water. Divide the dough into small equal-sized balls.
- Roll each dough ball lightly and place a spoonful of stuffing in the centre.
- Seal the edges carefully and gently roll again by dusting with flour to make stuffed parathas.
- Heat a moderately hot tawa and cook the parathas on both sides. Drizzle oil as required and roast until golden brown spots appear.
- Healthy and flavourful carrot parathas are ready to serve. Enjoy them hot with curd, pickle, or chutney.
