Verkadalai chutney - Peanut chutney

   Back at Chennai, my mother used to prepare fabulous chutney, depending on the available ingredients.  Everytime, it was different - ranging from onion chutney, mint chutney, peerkankai chutney, dal chutney, verkadalai chutney etc.  Yes, I am still drooling here thinking of her exotic chutneys :D

     For us, it would be always coconut chutney, but for an change, I tried my mother's recipe for verkadalai chutney.  I must say, it resembled an spicy desi version of ' Peanut butter'.  Chutney was soo smooth, soo buttery to have with every bite of dosa.


The next day, I called mom and thanked her for such an unique and tasty chutney.  Bored of regular chutney, please do give them an chance...  :D


Preparation time:  10 minutes
Cooking time:  10 minutes
Serves: 4

Ingredients required

  • 2 tsp of oil
  • 3-4 dry red chillies
  • 1/4 cup of finely sliced coconut
  • 3/4 cup of finely sliced onions
  • 1/2 cup of skinless peanuts
  • 2-3 tsp of tamarind extract
  • Salt, to taste
To temper
  • 1 tsp of oil
  • 1/2 tsp mustard seeds
  • 8-9 curry leaves
  • 1 tbsp of peanuts



Method

Heat oil in an pan, roast red chillies, onion - coconut slices and peanuts batchwise.  Keep them aside to cool.  


In an blender, add onion-coconut slices along with red chillies and blend them smoothly.  Finally add peanuts and blend into smooth puree.  Add imly and salt accordingly.


In an separate pan, heat oil, followed by adding  mustard seeds, let them splutter.   Add curry leaves, peanuts and fry them two seconds.  Add this temper to chutney.
