Sweet n sour cookies



    Recently, I had started to grow fond of strawberry cream which I prepared for kronut.  I am experimenting them with lots of bakeries, one such is this cookies.  I named them 'Sweet n sour' because of their blessful fusion of strawberry and chocolate chips.  You can also try replacing strawberry with ingredients like Anardhana (pomegranate seeds) in order to find an more Indian version.



One first bite of this cookie reveals its crispy texture that easily melts and the sour taste of strawberry comes at the end.  When this sour taste combines with choco chips, entire sour-sweet combo tickles our tongue, lightens mind and brings out original 'khatta meetha' version of hajmola candy.  Any kid who enjoys sourness would consider these cookies an everytime-delight!!  And yes, yes, yes varsha luved them a lot!!





Now let us move to ingredients required and methodology.




Yield: 12 Big cookies
Preparation time: 20 minutes (excluding two hours of refrigeration)
Baking time: 20 minutes


Ingredients required


  • 4 tbspn unsalted butter
  • 8 tbspn icing sugar
  • 1/4 tsp strawberry essence
  • Pinch of orange red colour
  • 11/4 cup of self-raising flour
  • Pinch of salt
  • 1 egg white
  • 1/2 cup powdered sugar
  • 1/4 cup chocolate chips


Method


Combine flour, sugar and salt, keep aside.  Pre-heat the oven to 180 degree celsius.  Then,  beat the butter along with icing sugar till they cream up.  Add essence and colour, give an gentle stir.  Your strawberry flavoured cream is now ready.


To the cream, add in one egg white and given an light stir.




Add in flour mixture on batches and incorporate them well with strawberry cream.



Knead them well, you can refrigerate them for about two hours.  


After refrigeration, roll them into large circle.


Sprinkle choco nuts and roll them over butter paper so that they get incorporated into dough.




Cut them into desirable shapes and place on parchment paper lined baking tray.



Bake them for 180 degree celsius for first ten minutes, lateron lower the temperature to 150 degreee celsius for next ten minutes.  Cool them over wire rack.  



Store them in air-tight container.  Serve with glass of milk.
