BOUNTY BAR/ COCONUT BAR - (Without chocolate mould)

Ever since I have started my blog, many requested me to post some chocolate recipes.  Am sooo sorry that I was not able to post this earlier :(  Very idea for posting this bar struck me, when I was searching for some offline content.  Yes, they were for CCC Challenge.  It was then, that I stumbled upon my chocolate recipes notebook.  I used to treasure them a lot, because saving them from Varsha's clutches is really, really an hard deal :)  And yes, like all you wished, I am planning to pen down more and more of chocolates :)

Bounty chocolates are regular chocolates stuffed with moist coconut filling.  Every bite is heavenly as we can relish the goodness of both chocolate and coconut.  These are sure to delight all-ages.  Shama liked them a lot and Varsha is also growing fond of them.  You can surprise the kids or allot them for party.  New Year is also approaching, by the way, why dont you guys give them a try?

For making these, the filling had to be super-stiff, so that they dont break when dipped into hot, melted milk chocolate.  So, after shaping the filling, I refrigerated them for an hour and took them out few seconds before dipping.  Milk chocolate, broken into tiny pieces was melted using double boiler.  I see many prefering an double boiler here, because one pure relief using them is that you can directly supervise them or prevent from an easy-burning.  One can also opt for an dark chocolate coating, they would taste awesome with dark chocolates too :)

I enjoyed making them very much, and ended up eating more :D  I must, say these chocolates are 'sinful temptations' :D  :D

Preparation time:  20 minutes  (Excluding an hour for refrigeration)
Cooking time: 10 minutes
Assembly & Refrigeration: 15 minutes
Yield: 6 bars

Ingredients required

For making filling
  • 11/2 cups or 100 gm of dessicated coconut
  • 1 cup or 100 gm of milk powder
  • 3/4 cup or 75 gm of icing sugar
  • 1/4 cup of water
For outer coating
  • 250 gm of milk chocolate, finely chopped
  • 1/4 tsp of butter

Method

Add coconut, milk powder and icing sugar into bowl and mix them very gently.

Sprinkle water and stir again, be careful since you may end up adding more water, leading to goeey mess.  This is done till you get an nice dough.  For above mentioned ingredients, less than 1/4 cup water is applicable.

Now, using greased hands, shape them into bars and place over an butter paper lined tray.

The below one is an example.

After getting done with shaping, refrigerate them atleast for an hour.  After that,  melt the chocolate pieces in double boiler.  For one quite new at this, place an vessel filled with water and bring this to boil.

Place an wide-mouthed vessel (into which chocolate pieces are kept) directly over the top of vessel.

Stir them with spatula, my milk chocolates melted in five minutes.   After they got melted, remove from flame.

Add butter and stir.  Butter is added in order to give an glossy look.

Take an bar and roll them into melted chocolate.  Using help of spoons or fork, twist them in order to get an uniform coating.

Place them into butter paper and sprinkle with some dessicated coconut, if you wish.

Refrigerate them for ten minutes or till hard chocolate bars gets peeled away from paper easily.

Refrigerate them, you can store like this for an month.  But, come on, I say, won't these vanish within an week ???   :D   :D  :D

Enjoy..... :)  :)
