Nankhatai / Ghee Cookies

   Nankhatai is a popular tea-time snack found in Indian Bakeries.  Flour, sugar and ghee are its key ingredients, here I am making cardamom/Elaichi flavored nankhatai. Recipe adapted from Nita Mehta's book. 





Ingredients required

  • 125 gm or 11/4 cup of flour
  • 1/2 cup of powdered sugar
  • 1/2 cup of Ghee
  • Pinch of baking powder
  • 1 tsp curd - beaten till smooth
  • Pinch of salt
  • Cardamon powder - 1 tbsp


Method

Sieve maida along with baking powder twice, keep aside.  Beat ghee and sugar in bowl till they cream up.



Now add in curd, salt and 1tsp of elaichi powder.


Slowly fold in flour-baking powder mixture  and incorporate them.


Knead them into soft dough with few tsp of water (If required)


Divide them into small balls, press them between palm.  Make cross on top using knife and sprinkle cardamon powder on each cookie.  Bake them at 160 degree celsius for about 20 minutes. Cool them completely over wire rack.


Enjoy with tea!
