Butterfly choco cupcakes - Celebration time

    One evening my hubby told me the news of his promotion... he was double-promoted to Chief manager!  I was sooo happy and though I assumed myself on an casual form, I decided to make something special for him the other day.  My hubby likes to have all sorts of desserts, he is an cupcake-aholic guy.  I still remember the day i made five to six muffins and he ate all of it (without even giving to varsha!!)



The next moment, all I could think was chocolate, of course celebration means chocolate!!!  And in one such book, I have already mentioned as '100 Best delecious chocolate' I read about this cupcake.  Though this cup-cake required icing to be made, I went ahead and made them.  Fortunately, shame luved these cupcakes, he called them most delecious ones, he ever had!!




The chocolate cupcakes were made and brought to room temperature.  The top portion of muffin was cut and filled with icing.  The cut top portion was dusted with icing sugar, cut into half and placed over the icing sugar-resembling like butterfly structure.  Varsha luved them a lot!!  She rejoiced calling them as 'butterfly cupcakes' . 


Ingredients required

For making icing
  • 60 gm of unsalted butter
  • 125 gm of icing sugar
  • 25 gm of plain chocolate melted
For making cup-cake
  • 125 gm of unsalted butter
  • 125 gm of caster sugar
  • 125 gm of self-raising flour
  • 2 eggs
  • 2 tbspn cocoa powder
  • Icing sugar, to dust

Procedure

First, prepare the icing.  Cream up butter and sugar, stirr in melted chocolate and mix well, cool down and refrigerate.
 In an separate vessel, add butter and sugar (Given under cup-cake column)  Stir in till the mixture creams up.


Add in beaten eggs and mix well.


To this, add flour-cocoa powder in batches and incorporate them well without any lumps.



Pour this over muffin cups in pre-heated oven at 180 degree celsius for about twenty minutes.  And bake them till done, cool them over wire rack.


After the cupcake cools down, cut the top portion of muffin using knife and reserve the top portion.


Dust the top portion with icing sugar and cut into half.


Meanwhile, take out the icing and drizzle them over the cut portion of the muffin.


Arrange the two halfs of the dusted top over the icing so that it resembles butterfly such like below pic.



And done for rest of the muffins!!



Serve immediately, you can also add tutti-fruitti  or jelly to colour the butterfly wings.
