Fruits Charlotte Cake

   Charlotte cake is an dessert that can be had hot or cold.  Invented by French chef Marie-Antoine Careme and named after the chef's former employer's only child (Charlotte) this has sponge cake or ladys finger cake arranged over in a dish and is topped with fruit puree or custard.

    I had to make this as member of honourable group, potluck party, cyber style challenge hosted by Jagruti mam.   Adapted original recipe from tangy minds, kindly take a look as the preparation is made very professionally, thanks to tangy minds blog I am able to make this!!



   To begin with I was holidaying at chennai in order to attend my sister's marriage.  At chennai's residance there was no oven available, hence I was not able to prepare my own lady's finger cookies!!  And to top with lots of marriage preparations, confusions delayed my preparation and post a loongg, now I am back but still feeling tired and feverish from journey and marriage tension.  Hope I recover soon!!



Ingredients required

  • Sponge cake- 1
  • Gelatin - 2 tbspn
  • 2 egg yolks
  • 1 tsp vanilla essence
  • 1/2 cup sugar, divided
  • 1/2 cup milk
  • 1 cup amul fresh cream
  • Strawberries, for garnishing


Method


In a base of round pan, place small pieces of sponge cake on the bottom like below pic



For making custard, add 1/2 cup milk and boil, add 1/4 cup sugar and stir well.  Turn off the heat and add vanilla extract.  At the same time, add gelatin into water as per instructions given in the package.  Whisk  remaining 1/4 cup of sugar with egg yolks in separate vessel, and after whisking add milk-vanilla extract also.  Whisking and adding should be done in three batches

Now, heat this final mixture on stove till bottom part gets thickened.  Add gelatin mix also, remove from stove and after 5 minutes filter the entire mixture so that unequal part is removed.  .




Now place, this in ice-water bowl and keep stirring till the mixture thickens, now add whipped cream and fold well.



Now pour this custard- gelatin- cream mixture into round pan lined with sponge cake.  Refrigerate for one hour.  Garnish with apple, strawberry etc and serve chilled.  


Slice and serve :)
