Spinach Roulade

Spinach Roulade
Roulade refers to an roll of sponge cake with an filling.  In this post, we have an spinach flavoured sponge cake with an creamy and nutty ricotta filling. They are best served at room temperature.


When sliced, they were super moist.  We enjoyed it with our tea-time.  Apart from enjoying its creamines, we can  trick  kids into eating spinach :D

Chunky vegetarian delight

      With cloudy day today, we need to take an preferable break from summer-delights, isn't it?   Well, these tikkis are made from chunky vegetables, spinach, cheese and are baked.  Out of the oven, these were completely gorgeous with an cheese burst surface and full of flavours.  All loved it and my little daughter showed her  not-so-bumpy biceps and said, 'mommy, I am getting lot of strength now'  :)  :)    These cute, cheesy and iron-rich tikki's are best served hot with tomato & fig flavoured sauce.



Though these tikkis are made of finely chopped vegetables, baking them  released not only their flavour, but also chunkyness is reduced to mushy, soft, grainy texture and paalak is like dissolving in your mouth.  This delightful tikki not only kids-friendly, sure to appeal adults too.  You must cool tikkis completely before peeling them from butter paper, as they might disintegrate when they are removed hot.

Detox salad


Hi guys........  How are you all :)  And how was your new year celebrations?  We, celebrated ours @ Paradise :P  Yeah, that is an advantage of being an Hyderabadi, you know??  So, after an hectic schedule and exotic party foods, you must now feel to cut down some fat, opt for an brisk walk or prefer your green tea??  If so, then,  this salad is perfect for you :)  :)  Detox is nothing but, De + Tox, that is removing (De) the toxins/poisons from your body.  This is done by intaking fruits/vegetable known to nourish such properties.  



Detox salad, is an colourful platter of  such healthy vegetables and fruit in an glossy and sparkling dressing :)  I dressed them with olive oil, brown sugar, lime juice and crushed garlic.  Garlic, again is an pure anti-oxidant and I am used to eating them raw earlier days in order to get releived from monthly menstrual pain.  (Beleive me guys, garlic always does an ABRACADABRA magic to  periods pain)  If you guys are not used to raw garlic, you can avoid them and go with other dressings :)  I have also included spinach here, again it is not at all problem to include canned or raw baby spinach leaves.  I have used paalak, one can use mustard/Amaranthus too :)

Cooking time: 30 seconds
Cooling time/drying time: 15 minutes
Assembly: 10 minutes
Serves: 2

Ingredients required

For salad
  • 1/2 cup of  beetroot, cut into thin strips
  • 1/2 cup of carrot, cut into thin strips 
  • 1/2 cup of pineapple, cut into thin strips
  • 10 spinach leaves

For dressing
  • 2 tbspn of olive oil
  • 1 tsp of brown sugar
  • 2 garlic pods, crushed
  • 1 tsp lime juice


Method


Blanch spinach leaves in hot water, for about thirty seconds.  Remove and dry them for fifteen minutes.  Tear them into long strips.  In an bowl, mix all dressing and toss beet, carrot, spinach, and pineapple sticks into them.  Enjoy....

Palak paneer

   This gravy tasted like heaven, the green paste made here was so simple and amazing.  For making green paste I sauted 300 gm of finely chopped palak along with one chopped onion, one chopped tomato, 2 tsp ginger paste, 1 tsp garlic paste, 2 green chillies finely chopped, 1/2 tsp punjabi garam masala and 1/4 tsp salt.  I cooled the mixture down and blended it ..


Other ingredient added was, of course fried panner and heavy cream.  If you find it difficult to add cream, better buy full cream milk and reduce them by half through constant stirring,  Add half reduced milk as an alternate for cream.  

Ingredients required

  • Palak paste
  • Panneer cubes- 9-10
  • Heavy cream - 100 ml
  • Salt, as required

Kichi bhajji

Kichi bhajji  is one of our authentic dish prepared during Sankranti/Pongal.  We accompany this with Bhakri, or dhapaatya.   This healthy finger-licking gravy is an composition of spinach, veggies, and all sorts of dry pulses like chana, double beans, soya, green peas etc.




 I still remember in my childhood days, where my granny used to prepare it in large vessel and she used to store it for about ten days without even  refrigerating it.  And the best part of kichi bhajji is that the taste gets better day by day, after everytime it is heated.  Though i made it in large quantity for this pongal, bhajji got over by the end of third day.. such is its excellance.... I wish I had prepared more and had it now  .... :(  :(

Preparation time mostly takes an hour, and back at home, I chopped  all vegetables previous day,  to make my tomorrow's work little easier.  Cooking time would be some three to four hours.  

Ingredients required

Pressure cooking part one (Combine spinach with imli, green chilly  and pressure cook for one whistle, keep aside)
  • 2 bunches of palak spinach, cleaned and finely chopped 
  • 2 bunches of amaranthas leaves/molai keera, cleaned and finely chopped
  • 2 bunches of small methi leaves, cleaned and finely chopped
  • 2-3 slit green chillies
  • one cup of water
  • 4 tsp of thick tamarind extract

Pressure cooking part two (Combine chopped vegetables with 11/2 cup of water and pressure cook for one whistle, keep aside)
  • 100 gm of cauliflower
  • 100 gm of carrot
  • 100 gm of beans
  • 100 gm of raddish
  • 100 gm of potato
  • 100 gm of capsicum
  • 50 gm of cabbage

Sindhi saag (sai bhaaji)

   Sai meaning green and bhajji meaning vegetables, this sindhi dish has an great fusion of vegetables along with greens.  This is quite addictive and ever since I made them, my husband, who is an fussy eater, demands them atleast once an week   :)  And, yes who wont resist such an delecious bhajji with an healthy pack of ingredients?  :)


I tried this bhajji many times, and altered the composition of dal to vegetable ratio.  I found the below one to be quick and easy.  Traditionally these bhajji is served with rice, though they make an excellant combo with roti/paratha/dosa etc.  And, yes, there is not limits or constraints on the vegetables added, you can go ahead and experiment with your own stocked up vegetables, because this bhajji will never disappoint you :P
