Meal maker tikki with makhni sauce

 Going out of vegetable stock?.... Refrigerator under repair?....  nor do you have an surprise guest visit?.... Do not fear, if tiny, chocolate brown soya chunks or meal maker is there, this would be, perhaps, an blessing in disguise :)  Just make sure you stock them up from your nearest supermarket and they may never fail your expectations.... Yes ranging from pulao, curry, noodles this meal makers can be mixmatched in our regular cooking, here is one such sample.... meal maker tikki.  To top them more delecious for Potluck party, I have accompanied them with my version of makhni sauce.  Both were godly and  pleased all...


I have combined meal maker with few of vegetables, but other half of combo is completely left to you.... you can add anything that is stocked up at your home ranging from left-over rice, poha, murmura, crumbled paneer etc

Soya chunks ki vade

  My kiddoo remained sick for over four days... :( but, slowly she was recovering from her physical illness.  So, this weekend, I decided to make something special for her...She luves vada, and everytime she sees them outside, she will say, 'mai, i want vada'.. But, all left was some sprouts, some dal and soya chunks/mealmaker balls.  It was then, i decided to add them and transform into an pure hybrid vada.. ;)  And yes, result was good... vada was fabulous grabbing everyone's attention and was soo glad that kid liked it...
Afterall, it was an healthy protein combo pack, do try it for ur kids and let me know...

Soya Aur Tarkari Ki Masala | Soya Chunks & Mixed Vegetable Gravy

Soya Aur Tarkari Ki Masala is a delicious and wholesome Indian vegetarian curry made with soft soya balls and a colourful combination of mixed vegetables. The soya and vegetables are simmered in a rich onion-tomato gravy flavoured with ginger, garlic, mint, garam masala and Kitchen King masala. The addition of khoya and milk gives the gravy a wonderfully creamy and mildly rich texture. It is an easy yet satisfying dish that makes a lovely addition to an everyday Indian meal or a special vegetarian spread.


                                   




Ingredients required

For gravy base
  • 1 cup chopped onions
  • 1 cup chopped tomatos
  • 1 tsp ginger-garlic paste
  • 1 tsp finely chopped green chillies
  • Handful of mint leaves
  • 2 tsp khoya
  • 1 tsp garam masala
  • Pinch of haldi/turmeric
  • 1 tsp Everest Kitchen King masala
  • 1/2 tsp salt
Other
  • 1/4 cup soya balls cooked with one cup of water and half tsp salt
  • 1/4 cup milk
  • 1 cup mixed boiled vegetables like cauliflower, potato, carrot and beans


Method

  • Prepare the gravy base: Heat a little oil in a kadai. Add chopped onions, tomatoes, ginger-garlic paste, green chillies and mint leaves. Add khoya, garam masala, turmeric, Kitchen King masala and salt.
  • Sauté everything over medium heat for about 15–20 minutes, stirring occasionally, until the onions and tomatoes become soft and the mixture is well cooked.
  • Allow the mixture to cool slightly, then blend into a smooth paste.
  • Meanwhile, cook the soya balls in 1 cup water with ½ tsp salt. Drain well and gently squeeze out excess water.
  • Heat oil in another kadai and shallow-fry the cooked soya balls until lightly golden. Add the boiled mixed vegetables—cauliflower, potato, carrot and beans—and sauté for a few minutes.
  • Add the prepared onion-tomato gravy and ¼ cup milk. Mix well and simmer on low heat for about 5 minutes, allowing the flavours to blend.   


Serving suggestions


You can serve Soya masala with 
  • Roti or chapati
  • Butter naan or garlic naan
  • Paratha
  • Jeera rice
  • Steamed basmati rice
  • Vegetable pulao.  For a complete meal, serve it with roti, cucumber-onion salad, papad and a bowl of plain yogurt or raita.

Dal ki soya

This gravy is highly proteinacious, combining soya chunks (Meal maker balls) with dal.  Best suits with roti.



Ingredients required

To make masala paste
  • 1 cup of onion-tomato paste (half cup onion and half cup tomato sauted on high flame for ten minutes, cooled and blended)
  • 4 tsp of boiled tuvar dal
  • 1 tsp ginger-garlic paste
  • 3 tsp of chopped mint leaves
  • 1 tsp of chopped green chillies
  • 1/2 tsp garam masala powder
  • 1/2 tsp chilli powder
  • 1/2 tsp dhanya powder
  • 1 tsp roasted and powdered jeera
  • Pinch of haldi
  • 1/2 tsp of salt
Other ingredients
  • 1/2 cup of soya chunks
  • 1/2 tsp salt
  • 1 cup water
  • 8-10 tsp of oil
  • 1 tsp of lime juice
  • Chopped coriander leaves, to garnish

Method

Blend all ingredients under masala into a fine paste.  Boil one cup water and add salt, add soya chunks and let it get cooked.  Wash soya chunks under cool water, squeeze and keep it away.  In a pan shallow fry these cooked soya chunks with 8 tsp of oil.  Cook till they turn light brown, keep them away


In the same pan, add masala paste and cook for ten minutes in simmer flame, add 1 tsp of lime juice.



Just before you serve, add soya chunks and cook for two minutes in simmer flame.  Serve garnished with coriander leaves


Note that soya chunks should be added before you serve, if added before it will turn soggy
