Salted caramel pots de creme

Hi all, yes my summer vacations are over and here I am back to my pevilion :)   I did quite an few relaxed baking though, those, will try updating to you guys soon.  Back to Baking partners challenge, this month - Tamy had suggested us two wonderful custard based recipes.  I had choosen, this salted caramel pots de creme. 



Pots de creme, is an french based dessert which refers to an pots of custard or cream.  They are prepared with egg yolks, milk, cream and an flavoring (which here, is caramel).  The mixture so obtained, after straining  are baked in waterbath, cooled  and are refrigerated overnight for an firm custard.   These pots looked gorgeous after an sea salt sprinkle, would have be better with an whipped cream as well.  The firm crusted top with an gooey filling was like chewing into an toffee. The sea salt complemented very well with caramel filling and gave an crunchable texture to pots de creme.   At home, everybody enjoyed and licked the  ramekins clean  :)  Thanks to Tamy and Swathi for such an wonderful challenge.  Nothing would have cheered my family better :)

Koffiebroodges or Coffee rolls

Koffiebroodges or coffee rolls are from Dutch.  They are glazed, with custard filled rolls which find great company with Coffee.  They also make an great party-time snack.  Great to taste and easy to make, this is sure to please everybody at home.  Thanks to Swathi Iyer and Kaveri for introducing this sweet rolls to us.



Back at home,  I made them at two batches, we all relished.  My daughter, who just woke from her noon-nap, landed straight near oven and demanded them.  I, handed her some and she finished them in seconds, burping out loudly.  :P  These buns were too appealing since they had an shiny, pale red glaze.  This was  due to brushing of jam over the top of baked roll.  According to source,  powdered sugar is also added as glaze.

Strawberry Trifle shots

  For my potluck party, this month,  I decided to go for dessert.  What else can I settle for my awesome bloggermates??  :P  Yes, dedicating strawberry trifle shots for an rocking party...


'Trifle' is an dessert made by layering of sponge cake, custard, jelly, fruits and finally whipped cream is used as an garnish here.  I, utilized this humble opportunity to clear my lazy strawberries resting @ refrigerator :P  :P   With an bit of planning, you can, also make them instantly. (Apart from whipped cream, which does not come at handy...)  I made mine at shot glasses and hence the name :)


At home, everybody feasted on them.  The crumbled cake-base went well with with sour jam and sweet custard.  I am planning to make them quite often :P

Chocolate eclairs - Baking partners challenge

Baking partners is a group for new bakers, they enhance the baking skills by alloting monthly challenges, mailing all suggested recipes, tips etc This month's challenge was Chocolate eclairs.

Thanks to Baking partners for suggesting the same as honestly speaking the topic was quite new to me, but after coming across the recipes and few videos, I understood that chocolate eclairs is a french pastry filled with choco-custard cream (and also any fruit custard cream) and topped  with choco glaze.  The very difference of this to other pastry form is that the basic dough is first cooked in stove first, mixed with flour, then added to beaten eggs to obtain a glazy form.   I followed the pastry recipe by www.joyofbaking.com

Fruits Charlotte Cake

   Charlotte cake is an dessert that can be had hot or cold.  Invented by French chef Marie-Antoine Careme and named after the chef's former employer's only child (Charlotte) this has sponge cake or ladys finger cake arranged over in a dish and is topped with fruit puree or custard.

    I had to make this as member of honourable group, potluck party, cyber style challenge hosted by Jagruti mam.   Adapted original recipe from tangy minds, kindly take a look as the preparation is made very professionally, thanks to tangy minds blog I am able to make this!!



   To begin with I was holidaying at chennai in order to attend my sister's marriage.  At chennai's residance there was no oven available, hence I was not able to prepare my own lady's finger cookies!!  And to top with lots of marriage preparations, confusions delayed my preparation and post a loongg, now I am back but still feeling tired and feverish from journey and marriage tension.  Hope I recover soon!!

Choclatey custard baskets

   Hi guys, this is my 200th post, and am soo happy about it..
Today I will share choclatey dessert in order to make this post special... Not long before, I attended choclate classes here at hyderabad... The tutor was soo nice to me, she taught me how to cook seven different types of choclates, though I wanted to make advanced course (Which included how to make choclate bouquets and hundred other types), time did'nt permit me to do so.  Doin or making choclate requires immense patience, and perfection bcoz this is a highly sensitive process,,, if you fail any step, choclate may get spoilt at end of the day..

Apple & Custard scrolls




Hi guys, I fell in luv with these scrolls ever since I first saw them in Christine's blog... I, was dying to prepare them... and finally took extreme step to prepare these gorgeous scrolls.  Prepared in two batches, made individual buns and baked them on aluminium tin to get stuffed loaf..
