Koffiebroodges or coffee rolls are from Dutch. They are glazed, with custard filled rolls which find great company with Coffee. They also make an great party-time snack. Great to taste and easy to make, this is sure to please everybody at home. Thanks to Swathi Iyer and Kaveri for introducing this sweet rolls to us.
Back at home, I made them at two batches, we all relished. My daughter, who just woke from her noon-nap, landed straight near oven and demanded them. I, handed her some and she finished them in seconds, burping out loudly. :P These buns were too appealing since they had an shiny, pale red glaze. This was due to brushing of jam over the top of baked roll. According to source, powdered sugar is also added as glaze.
So, let us learn about making this simply amazing rolls as follows
Preparation time: 25 minutes
Cooking time: 15 minutes
Baking time: 15 to 20 minutes
Yield: 14 rolls
Ingredients required
For filling/custard
- 150 ml of milk
- 2 egg yolks
- 1 tsp all-purpose flour/maida
- 1 tsp custard powder
- 2 tbspn granulated sugar
- 1 tsp vanilla essence
For rolls
- 2 cups of flour/maida
- 1/2 tsp salt
- 1 tbspn active dry yeast
- 1/2 cup lukewarm milk
- 1 tbspn sugar
- 2 tbspn butter
- Water/milk, to knead
- 1/3 cup raisins
For glaze
- 2 tbspn jam (mixed fruit, preferable)
- 1 tbspn warm water.
Method
For filling/custard:
In an small bowl, mix yolks with custard powder, flour and vanilla essence. Bring milk to boil in an separate pan, add sugar and stirr in yolk mixture. After the custard thickens, filter/strain them into an neat bowl. Refrigerate overnight.
For rolls:
To lukewarm milk, add in yeast and sugar. In an wide-bowl, add flour and salt. Rub through butter. Make an well and pour the yeast mixture, knead them into soft dough by sprinkling water/milk if needed.
Now, transfer this dough into clean, greased bowl, covered with muslin cloth and let them rise for an hour.
After first rise, I divided them into two balls.
I rolled each ball into an big circle and added custard. I, also filled in raisins and rolled them horizontally.
Slice them and let it rise for second time. Pre-heat oven to 180 degree celsius
After an second rise, brush with oil and bake for fifteen to twenty minutes.
Once out of oven, brush jam mix over them and let it cool
After they cool also, brush with jam. Enjoy with hot cup of coffee.
