Eggless Red velvet cupcakes

   Hi, friends!  With the shifting ahead, I completely lost track of my blogging.  And yes, we are  based in Riyadh, Saudi Arabia.  My new home just got set and for the upcoming festive mode, I dedicate you my eggless version of Red velvet cupcakes with Cream cheese frosting.


Red velvet cupcakes are slightly cocoa flavoured and the mix of baking soda and vinegar are added to help the cake rise and retain the moist texture.  Since I didn't have vinegar at home, I replaced them with lime juice and it worked fine.  Super-moist cupcakes with a creamy, tangy frosting  were a total yum!   My family loved it.  Do try this and let us know your feedback.

Chocolate chip cupcakes

    Hi friends, yes missed blogging for so long time.  All this time, has been spent well with improvising my cooking skills, and specially BAKING <3  My hubby has promised me another bigger model of OTG, next month, so YAY excited.  You can definitely stay tuned for more cakey recipes then.  So, chalo let's move to our post. There are two types of Baking, we can see in any forum - one will be completely catchy and fancy with fondant and icing, and keeps the promise to inspire any layman into baking, other type is nothing fancy, but simple baked treats which is an whole hearted meal by itself and serves as an comfort food.  Yes, our post falls on later, Heavenly Chocolate chip cupcakes, which is an perfect accompaniment to our Tea-time.



These simple treats are yum, and best served warm.  And the best part of this recipe is that, these are made of maida and an part of wheat flour, giving them an additional healthy quotient as an uplift.  They  make an great option for your kids snack break as well.  You can refrigerate and consume them within five days, but please do microwave/reheat for an warm super yum treat.

Rainbow cupcakes

    CUPCAKES.......those wonderful, tiny delights topped by an gorgeous swirl is my all-time-inspiration. I love to experiment with cupcakes, but running almost an nuclear family, restricts me to bake  twice an month.  And with not-so-cream loving hubby, I had to opt for an minimal or no-creamed cupcakes.  So, once when I came through sour rainbow strips in an super-market, I really knew what to make from them.... :D  :D  Do check out my other cupcakes collection.... Rainbow-themed cupcakes, which can also be smeared by blue coloured buttercream, topped with white buttercream swirls with rainbow crossing over, is an perfect party food and would please any kid with an summer boredom :)  I avoided blue buttercream, and replaced it with an blueish cake batter, thus my icing-usage was reduced, an fact to satisfy my hubby's soul :D

Eggless vanilla cupcakes with white chocolate icing

I can realize a lot of excitement whirling up my head as I pen down this post...yes, an array of emotions... I must suggest... An long gap filled with back and forth travelling has made my online status inactive for an longer period, especially my survival without facebook  for months together :P  :P  So, I strongly wanted to start my post with an delecious dessert (in order to compromise my absence, I may assume :P ) Am likely to pen down my adventures with upcoming posts, please pardon me since I running out of time in this post..


These are delecious super-yummy eggless vanilla cupcakes with white chocolate icing, dedicating to my CCC group.  The white chocolate icing, is adapted from the book '100 Best Delecious Chocolate'.  The best part of this dessert is that they are completely egg-free,  drawing attention of strict vegetarians too!! The smooth silky white chocolate icing over the top is an highlight, suggesting this to be an kid-pleaser as well...  Since I had an star-shaped tip 33,  I kind of enjoyed myself playing around with piping the icing.

Panda cupcake

   Diwali went awesome, made an quick Chennai trip, visited all and had an good time.  How was yours??  Guys, before I proceed, let me make an friendly reminder about event & giveaway happening, kindly click here for more details.   Now, getting back to my post,  let me introduce you a new panda family, which officially resides at our home!!!

 
They look beautiful and adorable also, don't they??  And methodology, unlike other designer cup-cakes is simple.  Bake an chocolate cupcake, top them with vanilla icing, spread over sugar granules and with an few touch of chocolate chips/buttons you are done!!!  :) :)   My daughter loved them very instant, and she wants to take them to school to show-off!!  :D  :D

Preparation time: 35 minutes
Baking time: 15 minutes
Yield: 10 cupcakes

Ingredients required

For the cake batter
  • 1 tbspn oil
  • 1 tbspn melted butter
  • 3/4 cup powdered sugar
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1 tsp Baking powder

Orange flavoured cupcakes with double chocolate icing


    I am an choco-aholic person.  I, also am choco-freak :) :)  well, most of my readers would be knowing that by now :)  :)  Even in my personal FB profile, I have an habit of updating all my chocolatey dishes to album, titled 'Chocolatey passion'  Any sweet dish, I start to make, I would imagine them  an chocolatey version  and only then proceed with regular version, such is my addiction........  :)  :) And yes, I had dreamt of doing cupcake with double chocolate icing, one day, forcefully drew myself one evening and ta-da!!!!



Since orange has an everyluving bond with chocolates, I prepared my cupcakes with an orange flavour.  And yes, these cupcake is an kiddie delight, party-time snack and an any-time temptation to all-ages.  Given all ingredients handy, these can be easily made within hour!!  Isn't it great??  Take all ingredients at vessel, whisk them, bake and cool,  simultaneously prepare the icing. No whipping up after adding each ingredients or no stiff peaks makes this preparation  ' an child's play'

Dairy cup-cakes/ Non-butter/ Non-oil cup-cakes

  Hi all!!!  First of all , I am very proud to present you these diary cup-cakes, my first successful baking experiment.  It happened once, when Shama had asked me to make some cup-cakes and I noticed that all left in my refrigerator was some fresh cream and milk.   Wasn't heart-broken, tried with available ingredients at hand and hurrayy!!!!, results were fantabulous.



Diary cup-cakes are made with milk and fresh cream as key ingredients apart from regular ones.  The advantage of non-butter or non-oil makes it an healthy alternative for adults, from regular cup-cakes.    Also I integrated a lots of chunky, healthy stuffs like grated apple, tutty-fruity, sliced almonds, finely chopped dates, which also makes it ideal as an tea-time snack (therefore, doesn't remind us the absence of buttery frosting).   So, it can  delight any kid at home, also be party booster or for surprising guests at home, this cup-cakes is quick to make and hence can find a special place on ur baking session.

Butterfly choco cupcakes - Celebration time

    One evening my hubby told me the news of his promotion... he was double-promoted to Chief manager!  I was sooo happy and though I assumed myself on an casual form, I decided to make something special for him the other day.  My hubby likes to have all sorts of desserts, he is an cupcake-aholic guy.  I still remember the day i made five to six muffins and he ate all of it (without even giving to varsha!!)



The next moment, all I could think was chocolate, of course celebration means chocolate!!!  And in one such book, I have already mentioned as '100 Best delecious chocolate' I read about this cupcake.  Though this cup-cake required icing to be made, I went ahead and made them.  Fortunately, shame luved these cupcakes, he called them most delecious ones, he ever had!!
