Hi guys, i just added a new ingredient to our traditionally prepared vegetable curry/bhajji. Instead of cooking in normal onion-tomato and other base, i added boiled potatos with other spices. The result was amazing, gravy came out quite well and did an excellant combo with roti.

This is followed by adding haldi, salt, garam masala. Sprinkle water and cook till veggies are half done.

Ingredients required
For making potato base
- 4-5 baby potatos/ 4-5 tsp of mashed potato
- 2-3 green chilli
- 1 tsp peppercorn
- One handful of pudhina/mint leaves
- 1 tsp jeera
For making bhajji
- 3-4 baby potatos, boiled
- Half a cup cauliflower florets
- 3-4 tsp carrots, cut into small pieces
- 3-4 beans, cut into small pieces
- 4-5 tsp oil
- Half cup of onion and tomato
- 1 tsp ginger-garlic paste
- 1tsp garam masala
- Salt to taste
Method
In a kadaai, saute onion, tomato and ginger-garlic paste for fifteen minutes. Cool.
Blend the above mixture along with ingredients specified in potato base(See the pic below)
In a kadaai, heat oil and add veggies like gobi, potato, carrot, beans.
This is followed by adding haldi, salt, garam masala. Sprinkle water and cook till veggies are half done.
Now add the spice paste, and cook furthur on a simmer flame for about twenty minutes. Adjust the spice as per your wish (If you are a spice lover, go on for some red chilli powder) Garnish with coriander leaves and serve.
