Kovaikkai stir-fry

This lovely delecious side-dish goes very good with any podi sadham/dry flavoured rice




Ingredients required


  • 1 cup of kovaikkai
  • Oil, as required
To temper
  • 3 tsp of oil
  • 1/2 tsp of rai/mustard seeds
  • 1 tsp whole cumin seeds
  • 2 tsp of dry kasoori methi
  • 2-3 slit green chillies 
  • 1 tsp of Everest chicken masala (Go ahead and try guys...this has aromatic combo of spices which shud be relished by all)
  • 1/2 tsp salt
  • 1 tsp ginger-garlic paste
  • Pinch of haldi/turmeric powder


Method


Atfirst, cut kovaikkai the both side-ends


Then finely chop them vertically to get fingerchips-look


Next step would be to semi-fry or deep fry these finger-like-kovaikkai till it turns golden brown, set aside.


I semi-fried it !


In a kadaai, add all ingredients for temper one by one, toss the fried kovaikkai well around masala.


Simmer for few minutes and serve hot with any rice


Was very tasty

Kovaikkai podi saadham

Kovaikkai podi sadham is healthy and also tempting rice, goes too special on rainy days.



Ingredients required

  • One cup cooked rice
  • Half cup chopped kovaikkai
  • Salt, to taste
To temper
  • 3 tsp oil
  • 1/2 tsp rai/mustard seeds
  • 1/2 tsp jeera
  • 6-7 curry leaves
  • 2-3 red chillies broken into half
For podi/powder
  • 4 tsp chana dal
  • 1 tsp jeera
  • 1 tsp peppercorn
  • 2 tsp broken urad dal
  • 1/2 tsp sombu
  • 1/2 tsp dhanya whole
  • 2 dry red chilly(optional)
  • Handful of curry leaves

Method

In a kadaai, dry roast all ingredients given under podi and powder it
In a separate pan, add 3 tsp oil and saute kovaikkai pieces till they are cooked and turn golden brown, keep aside

In a pan, heat oil, add ingredients for tempering one by one.

This is followed by adding sauted kovaikkai, and prepared podi


 Mix podi with kovaikkai well.  Add cooked rice and mix well.  Adjust salt, and serve hot with pappad or omlette



Nothing can be more nutritious than this!!!!!!

Kovakkai chutney/ coccinia chutney

     Thinking this as an wierd recipe???  Dont worry even i thought to myself so in first place when i came across this recipe in Kumudham tamil magazine, lateron i just gave a try and beleive me i liked it very much!! Even my husband who used to be tooo choosy n his plate, liked it quite well.  So, guys, honestly give a try. Talking about medicinal properties, in traditional medicine, this   has been used to treat leprosy, fever, asthma, bronchitis and jaundice. This can be had along with morning dosa to powerstart the day as they have been also identified to purify the blood..







Ingredients  

 



so as you can see, there are a cup of chopped kovakkai, 1/4 cup of chopped onions, 1-2 small bits of tamarind, 4-5 curry leaves, 2 green chilli, 4-5 garlic cloves, and half a tsp of rai and urad dal(for tempering)

Method


Saute onions, kovakkai, green chilli and garlic cloves in kadai for some ten to fifteen minutes


Lateron when cooled, blend them in a mixie together with tamarind pieces, lastly temper with rai, urad dal and curry leaves.  Add salt to taste




This is what i call the healthy breakfast combo
