Piri piri chicken with coleslaw

    Still remember the introduced flavour for frech fries in McDonalds, called as 'Spicy African seasoning, Piri Piri'  Yes, this chicken is flavoured with the same piri piri sauce.  Piri piri, the name derives from African Birds Eye chilli.





Piri piri sauce, which was Portugese in origin, and got prevalent in Mozambique, Angola, South Africa is made from these chillies, Bayleaf, peppercorns, oregano, onion, garlic, lime juice, basil, cilantro, citrus peel etc.  Now, lets make this piri piri sauce, marinate it with chicken and cook till done.  This spicy, red hot starter is accompanies by South American Coleslaw... It was super-duo combination.


Ingredients required

For Piri Piri sauce (Grind without adding water)
  • 2-3 red chillies
  • 8 tsp lime juice
  • 1 bayleaf, crushed
  • 1 tsp dried oregano
  • Few basil leaves
  • Few coriander leaves
  • 4 tsp of finely chopped onions
  • 4-5 garlic pods
  • 10 tsp oil
  • 1 tsp whole peppercorn
  • 1 tsp salt

Other
  • 350 gm chicken, with bones
  • Quartered onions
  • Quartered capsicum
  • Coleslaw, to serve

Method


These are the chillies



Cook chillies in boiling water for ten minutes, cool them chop into fine pieces and blend with all other ingredients without adding any water, keep aside



Take chicken pieces, quartered onion, quartered capsicum on  a bowl.  Add in 2 tsp of prepared paste and let this mix marinate on refrigerator for about five hours



Grill them at 200 degree celsius for about 35 minutes, occasionally turing the sides for equally spaced cooking.  Serve hot with coleslaw
